Petites crèmes chocolat-Carambar, super faciles

Comme promis ici, voici la recette d'une des verrines, sûrement la plus simple à réaliser : des crèmes chocolat-Carambar. La recette n'est pas de moi, je l'ai déniché dans le livre "Trop bon et pas cher, 100 recettes d'un chef" de Jacques Torel, petit livre qui regorge de petites recettes à base de produits de nos placards.

La recette est pour 4 personnes mais j'ai pu faire une douzaine de mini verrines :
- 250g de chocolat
- 25 cl de lait
- 100g de Carambar (le classique au caramel)

Porter le lait à ébullition. Y ajouter les Carambar et les faire fondre en remuant. Une fois les caramels fondus, ajouter le chocolat. Mélanger le tout jusqu'à ce que le chocolat fonde complètement.
Verser la préparation dans des petits pots, laisser refroidir (au réfrigérateur).

J'ai préparé ces petits crèmes le matin pour le soir. Elles étaient très bien.
A retester avec une demi-feuille de gélatine pour voir ce que cela peut apporter de différent côté texture ...

me revoilà , alors les crèmes sont faites mais ...

j'avais oublié que ma multidélice était en mode "yop" depuis ce matin , du coup il me fallait attendre 15h15 ou utiliser le four (bain-marie)

j'ai donc opté pour le second choix ;)

et bien entendu j'ai adapté cette recette puisque faisant des oeufs au lait vanillés très souvent je me suis dite que pour cette crème et sa cuisson bain-marie mieux valait adapter davantage la quantité d'oeufs pour que ça prenne bien et pas de rique que ça ait le goût d'oeufs puisque le caramel et le chocolat prendront le dessus ... petites recherches sur le net et réadaptation à ma sauce !



cuisson au bain marie (dans le four) , pour 12 pots type la fermière :



70 cl de lait bleu

40 cl de crème liquide

20 carambars

100 gr de chocolat

5 oeufs

60 gr de sucre



même type de préparation , sauf que de départ quand je préchauffe le four je mets mon plat d'eau en même temps (th4) et au moment de mettre les pots à cuire dans le plat , l'eau est idéalement bien chaude limite bouillonnante , c'est le secret pour la bonne cuisson au bain marie !

je les ai mis pour 35 à 40 mn th 4 avec peut-être 10 petites minutes de + (??) , à vérifier tout à l'heure selon la "prise" ...

je vais tester avec :



* 1 oeuf

* 50 gr de sucre

* une petite brique de 20 cl de crème épaisse

* 50 gr de chocolat (largement suffisant , le caramel doit prendre le dessus)

* 10 carambars

* et remplacer la boite de lait concentré de la recette que je prends habituellement par 35 cl de lait bleu (demi-écrémé) ...

je prends 35 cl de lait car une boite de lait concentré fait 340 ml soit 34 cl !



celle que je fais toujours au lait concentré non sucré à une texture nickelle qui se tient merveilleusement , fondante en bouche et généreuse en goût ...

l'occasion de voir la différence avec du lait bleu ?



petite précision , recette pour 6 pots que je fais à la multidelices , programme 3 (avec de l'eau) pour 28 mn , elles sont un peu tremblottantes à la fin de la cuisson mais après passage au frais elles sont fermes : succès garantit !

J'ai testé hier soir car je voulais faire un dessert rapide et bon et j'ai été un peu déçue... ça ressemblait plus à du chocolat fondu qu'à une crème choco/carambar. Je trouvais le goût du chocolat trop fort et la crème un peu écœurante. Malgré la simplicité de la recette, j'ai du louper quelque chose...
